tahini oatmeal cookies ( YUM)

I am starting with a healthy cookie because its delicious! I have taken it to pot lucks and they go fast. its sweet and its flavor reminds me of a granola bar and yet its so good for you. Great for pregnant mommies to take along in the car or to work for a healthy energizing snack. Great for post workouts too.. great for kids perfect for snacking.

Tahini cookies

Ingredients

1 ½ cup rolled oats
6 tablespoons tahini (sesame paste)
½ cup sunflower seed kernels
½ cup honey ( you can add a bit more if you like a sweeter cookie)
½ cup sultanas( golden raisins) or regular raisins work just as well (optional)

Variations:( add these individually or together to the above to meet individual tastes)
¼ cup dried chopped pitted cherries
add sliced almonds or pecans walnuts all are delicious
adding cinnamon
replace some of the honey with maple syrup
I have yet to try adding whey powder for extra protein will let you know


Directions

1. Blend together well the tahini and honey
2. Toast sunflower kernels until slightly brown
3. Stir toasted sunflower kernels and oats into honey/tahini
4. Drop tablespoon-sized blobs of mixture onto oiled sheet pan
5. Bake at 350 °F for 10 minutes or until edges are brown
6. Let cool on baking sheet pan several minutes
7. Carefully remove to a cooling rack
8. The cookies will stick to the sheet pan pan if allowed to cool for too long. If that happens heat the pan a little in the oven before removing cookies.
